Banana Carrot Cake

Ingredients

100 grams Brown Sugar
50 grams White Sugar
100 grams Butter
2 Eggs
350g Bananas & Carrots
60 ml Milk
1 tspn Baking Soda
250 grams Flour
1 tspn Baking Powder
1 tspn Allspice
1 tspn Ginger
50 grams Chocolate Chips

Instructions
Melt butter, white and brown sugar
Add Eggs and mix
Mash 2 bananas and add finely grated carrot to make 350g
Heat milk and add baking soda, add to egg mix
Sift Cocoa, flour, allspice and baking powder
Add dry ingredients to egg mix. Add chocolate chips

Quiche

Quiche

  • 1 Onion
  • 50 Grams Frozen Peas
  • 200 grams Tinned Salmon
  • 2 Rashes Bacon
  • 2 Eggs
  • 100 ml Cream
  • 200 grams Pumpkin
  1. Chop onion and bacon and fry in pan. Chop pumpkin and microwave until soft (approx 5 min). When cooked, add pumpkin and salmon. Mix well.

    In a separate bowl, mix eggs and cream. Spoon meat mix into oven tin with pastry on base. Add cream mix. Bake.

Salad Dressing

  • 400 grams Highlander Lite Sweetened Condensed Milk
  • 1 Teaspoon Dry Mustard
  • 170 ml White Wine Vinegar
  1. Sift mustard into condensed milk

  2. Add vinegar to mix and stir

  3. Refrigerate

  4. Add milk to thin to pour-able consistency

Choc Orange Muffin

Chocolate Orange Muffin

  • 100 grams Sugar
  • 100 grams Butter
  • 1 Egg
  • 40 grams Orange pulp
  • 200 grams Flour
  • 20 grams Coco Powder
  • 60 grams Orange Juice
  1. Melt butter with sugar.

  2. Add eggs & milk. 

  3. Sift flour, coco powder & baking powder and add to mix

 

Chocolate Brownie

Chocolate Brownie

  • 200 grams Butter
  • 4 Eggs
  • 1 Teaspoon Baking Powder
  • 150 grams Sugar
  • 130 grams Flour
  • 100 grams Cocoa
  1. Melt butter and sugar, add eggs. Mix with dry ingredients.

  2. Put in rectangular tin and bake.

Pancake

Corvid 19 Day 5

Pancake

  • Milk
  • 1 Teaspoon Baking Powder
  • Flour
  • 1 Egg
  1. Add egg to milk to make 200g and mix

  2. Sift in flour and baking powder to 100g

  3. Pour on heated pan until surface bubbles, flip and cook 3-4 minutes

  4. Serve with whipped cream and fruit

Banana Cake

  • 125 g Butter
  • 175 g Brown Sugar
  • 2 Eggs
  • 300 g Bananas
  • 5 g Baking Soda
  • 30 g Milk
  • 5 g Baking Powder
  • 225 g Flour
  • 5 g Allspice
  1. Heat and cream Butter and Sugar. Add eggs, mashed bananas.

  2. Heat milk and stir in Baking Soda. Add to Banana mix.

  3. Combine dry ingredients; Flour, Baking Powder, Chocolate Chips & Allspice.

  4. Mix dry ingredients into Banana mix. Bake until cooked (20-30 minutes) in square tin. When cool, cut into squares.

Chocolate Gingernuts

Chocolate Gingernuts

  • 150 grams Flour
  • 20 grams Cocoa Powder
  • 70 grams Brown Sugar
  • 1 tspn Ground Ginger
  • 1 tspn Baking Powder
  • 100 grams Butter
  • 1 Egg
  • 1 tablespoon Golden Syrup
  • 1 tspn Vanilla
  1. Mix dry ingredients

  2. Melt butter, syrup. Wisk in egg, vanilla

  3. Add liquid ingredients to flour mix. Press into 40-45g balls and put onto baking tray. Press flat with fork. Bake in medium heat oven 20 to 30 minutes.

Choc Chip Biscuits

Chocolate Chip Biscuits

  • 100 grams Butter
  • 1 Egg
  • 100 grams Brown Sugar
  • 1 Teaspoon Vanilla
  • 250 grams Flour
  • 2 Teaspoons Baking Powder
  • 75 grams Chocolate Chips
  1. Melt and mix Sugar, Butter, egg and vanilla. Sift and add flour, baking powder. Add Chocolate Chips. Add milk if too stiff. Roll into 12 50g balls on baking tray. Press down with fork. Bake 125 deg 20 minutes
